Coconut Watermelon Blend

This afternoon pick me up drink is filled with delicious tastes, including mint and citrus limes. It’s super easy to make, energizing, and refreshing without being too heavy. Here’s how it’s made…
Blend together:
A couple of ice cubes
1 cup of coconut water
4 cups of cold watermelon
Juice of a fresh lime
Mint leaves
… and that’s it! Drink up!

Lemon Poppy Seed Drizzle Cake

I have a thing for afternoon sweets. Once four o’clock rolls around, I’m craving a little cup of coffee with some kind of sweet pastry or cookie. One afternoon, I decided to make this cake of lemon goodness… including tiny poppy seeds, sour zest, and oh so delicious icing made out of lemon juice and powdered sugar. You can find the recipe that I followed here… and, to get the full citrus effect, I recommend using half the amount of butter and sugar… bon appétit!

Edamame Dip

I’ve always been a big fan of pairing hummus and pita bread. It is one of my favorite, easy, and healthy snacks. This time, I decided to try something new. Instead of the classic chickpea dip, I swapped chickpeas for soybeans and olive oil for mashed avocados… Edamame dip too, is a healthy, easy to make, and easy to serve snack with just a dash of salt, pepper, and a spoonful of plain yogurt. Apricot Peach Frozen Yogurt

Now that the weather has warmed up and summer is on its way, I’m constantly craving ice cream… something sweet and cold and delicious. I’ve decided to make a healthier version of ice cream to curb my sweet tooth, using a simple recipe of just plain greek yogurt, a splash of vanilla, fresh peaches and juicy apricots.
